Light, melt-in-the-mouth biscuits. Perfect with a cuppa and I bet you can’t stop at just one!

 

Ingredients

175g butter

60g icing sugar

zest of 1 orange

125g plain flour

60g cornflour

2 Tbsp apricot jam

90g plain chocolate

You will also need, a piping bag with a 1cm fluted nozzle and baking parchment

 
Method

Cream the butter and icing sugar with the orange zest until light and fluffy.

Sift in the flour and cornflour and beat well

Set the oven to gas mark 4 or 180C.

Put the mixture in the piping bag and pipe 24 fingers, about 7.5cm long.

Bake for 15 mins. Put on a wire rack to cool.

Sandwich the fingers into pairs with the jam.

Melt the chocolate in a bowl over a saucepan of hot water.

Dip both ends of the fingers in chocolate and put on baking parchment to set.

As you can see from the picture I filled mine with Nutella, you really can just go with what you fancy and I usually fancy Nutella 🙂
