White Chocolate Cookies with Strawberry Yogurt Icing February 14, 2012

These cute heart-shaped cookies are so easy to make and the strawberry yogurt brings an extra sweet flavour

175g plain flour

100g butter, at room temperature

50g caster sugar

50g white chocolate chips

2Tbs strawberry yoghurt

For the Icing

200g icing sugar

2Tbsp strawberry yoghurt

Sieve the flour into a bowl, cut the butter into pieces, add to the flour and rub in until it resembles bread crumbs then stir in the sugar and yoghurt and chocolate chips.

Wrap in cling film and put into the fridge for 15 minutes.

Grease 2 baking trays.

Remove dough from fridge, roll out with your preferred shape cut out cookies. You can if you like just put spoonful’s onto the baking trays then flatten with a knife.

Bake in a preheated oven 190C/gas 5 for 20-25 minutes until golden brown. Leave on the baking tray for 5 minutes to harden slightly before moving them to a cooling rack.

Mix the sieved icing sugar with enough yoghurt to make a spreadable icing, once iced leave to set.

Try using different flavour yoghurt next time you make them šŸ˜‰

What do you think, would you make this?
