Chocolate Peanut Butter Brownies November 21, 2015

Choc peanut butter brownies

Two of my favourites right here, chocolate and peanut butter…..ohhhhh heaven!

Ingredients

225g peanut butter, smooth or crunchy it’s up to you

200g dark chocolate, broken into pieces

280g soft light brown sugar

3 eggs

100g self raising flour

Method

Set aside 50g each of the peanut butter and chocolate. Heat oven to 180C/gas 4 and line a 20cm square baking tin with baking parchment. Gently melt remaining peanut butter, chocolate and all the sugar in a pan, stirring occasionally, until the sugar has just about melted. Turn off heat and use a wooden spoon to beat in the eggs one by one. Stir in the flour and scrape into the tin.

Melt reserved peanut butter in the microwave on high for 45 secs, or in a pan, until runny, then drizzle over the brownie. Bake for 30-35 mins until it has a crust, but the middle still seems slightly uncooked.

Melt reserved chocolate, drizzle over the brownie, then cool in the tin before cutting into squares.

Quick Brownies August 9, 2012

These are delicious and only need a few ingredients.

Ingredients

1 1/3 cups of biscuits crumbs, digestive or rich tea are good

1 1/2 cups of chocolate chips

4 1/2 Tbsp butter or margarine, melted

1 (14oz) can condensed milk

Method

Line a 9 ins square tin with parchment paper. Heat the oven to 175C/gas mark 4.

Blend the melted butter with the condensed milk.

Stir in the biscuit crumbs and the chocolate chips. Pour the dough into the prepared tin and spread it out evenly.

Bake in the centre of the oven for 25 – 30 minutes until golden brown and slightly puffy. Leave to cool completely then cut into about 16 bars.

Tip: Don’t turn all the biscuits into too fine a crumb, it’s nice to have some small pieces in there too.

If you find you don’t have any chocolate chips the day you decide to make these, just get a hammer, as I did, and whack a chocolate bar a few times 😉
