Pork Chops with a Creamy Apple Sauce January 6, 2017

This is a lovely tasty way of doing pork. Serve with creamy mashed potato and savoy cabbage for a great meal.

Serves 2

Takes about 30-35 minutes

 

Ingredients

 

2 Tbsp olive oil

2 pork chops, or you can use pork loin chops as I did because that’s what I had in the freezer

1 sml onion, diced

300ml apple juice

1 eating apple, I used Royal Gala. No need to peel but core and cut into wedges

1 clove of garlic finely chopped

2 Tbsp creme fraiche

1 Tbsp whole grain mustard

1/2 tsp dried parsley (optional)

 

Method

 

Heat the oil in a large deep frying pan and brown the chops for about 4-5 minutes each side, then transfer to a plate and set aside.

Soften the onion and garlic in the same pan, then return the chops to the pan with any juices from the chops.

Pour in the apple juice and bring to the boil, then simmer, uncovered, for 15 minutes, turning the chops halfway through.

Transfer the chops to a plate again and add the apple wedges to the pan, stir in the creme fraiche, mustard and add a sprinkle of salt and pepper, then simmer to reduce and thicken the sauce until the apples are tender.

Return the chops to the pan and simmer for another 5-10 minutes and sprinkle on the parsley, if using.

One Ingredient Banana Ice Cream November 14, 2012

This makes a delicious soft scoop banana ice cream. No added ingredients so it really can be good for you! Also no ice cream machine needed. It really can’t get any easier!

The small amount of fat in bananas makes a magic trick when they are frozen and blended. They turn creamy instead of crumbly, with a smooth texture anyone can make at home.

 

To make the ice cream

 

Peel your bananas.

Slice them into small pieces onto a plate.

Freeze for 1 – 2 hours.

Once frozen put the banana into your food processor and blend, blend then blend some more (this actually only takes about 5 minutes) scraping down the bowl as needed.

That’s it, you’ve done it!

Tips:

You can also add a spoonful of Nutella (as I did) blend for 2 minutes for Banana/Chocolate.

Add chopped nuts too if you like.

Add some honey to the banana.

2 banana’s are enough for 2 servings, as above.

 

 

 

Homemade Nut Butter November 9, 2012

Thanks to a fellow blogger I decided to make this today. It’s so simple I don’t know why I’ve never made it before! Also as I’ve done here you can use any nut’s you like, I didn’t have Peanut’s in the house so used the Cashew Nuts I’d already opened, hence it wasn’t a full packet.

 

I used 345g of roasted and salted Cashew Nut’s, and, that’s all you need. No added oils or additive’s or preservatives!

 

Add nuts to the bowl of a food processor, process on high power until creamy and smooth for about 5 minutes, stopping to scrape down the sides of the bowl if necessary.

The nuts will go through a few stages: crushed, crushed into a fine powder, a paste, a thicker paste, a big “dough ball”, and then the ball will break down into runnier nut butter. At the point the nut butter is runny, continue processing for about one more minute, making sure the nut butter is as smooth as desired.

You can store the peanut butter at room temperature where it will keep for at least a week. As with any food that has no preservatives, use common sense in terms of storage, it will last for at least a month in the refrigerator, if not eaten much sooner.
