Slow Cooker Chilli Con Carne (2) (Winter Warmers) January 20, 2017

Ingredients

2 lrg onions

2 clove of garlic, crushed

2 Tbsp olive oil

1 kg stewing beef, cut into small cubes

2 tsp sweet smoked paprika

1 – 2 tsp hot chilli powder

2 tsp ground cumin

1 tsp ground cinnamon

3 Tbsp tomato puree

2 red chillies, deseeded & chopped

2 400g tins chopped tomatoes

2 red peppers, deseeded & chopped

1 x 410 tin red kidney beans, rinsed & drained

1 x 410g tin black-eyed beans, rinsed & drained

2 squares good quality dark chocolate

 

Method

In a large pan heat the oil & brown the onion & garlic on a low heat for 8-10 minutes, scoop onto a plate & return pan to the heat.

Brown the meat in 2 -3 batches, if need be.

Put the browned meat along with the onion & garlic into the slow cooker, add the spices & the tomato puree, stir all together.

Next add the chillies, tomatoes, red peppers & a generous pinch of salt. Half fill one of the tomato tins with cold water & add that too.

Heat on High for 1 hour then turn to Low & leave for 6 hours, then stir in the beans & leave on low for another hour.

Taste to check if you need more seasoning, add the chocolate & stir it through.

This can be served with rice or chips along with fresh chopped coriander leaves, soured cream, finely chopped red or green chilli & lime wedges

If you own a Slow Cooker (crock pot) use it!

You’re able to make some lovely stock with the Turkey, Chicken well, any left-over meat bones really.

Just chuck all those bones into your slow cooker along with some veggies, onion, carrots any veg that you might have that’s about to turn and needs using up. Also add a bay leaf or two and some mixed herbs.

Then fill the slow cooker up with cold water, to about 8cm/3ins from the top of the slow cooker.

stock-1Turn the slow cooker on to LOW and leave it for 24 hours….YES 24 hours! You’ll get all the flavour and taste from those bones, left over meat and veggies.

This is what you’ll get after 12 hours….

After 24 hours…and the bones are bare.

Oh and I forgot to say how nice your house will smell too! 🙂

After 24 hours you need to get a big pan and a colander and strain everything from the slow cooker. Once you’ve strained it all through the colander you’ll then need to strain it again, twice prefferably, through a sieve…you definately don’t want any bits of bone left in there!!

You’ll be left with a tasty pot of homemade stock, ready to make your own gravy or to add to other recipes as you can freeze the stock for later use. Freeze in glass jars as long as you leave space at the top, in soup bags or even ice cube trays.

 

Slow Cooker Smoked Pork and Vegatables November 27, 2016

Smoked pork gives a lovely amount of smoky flavor. Cooking it in a slow cooker only requires a few ingredients to produce a flavorful dish. You can add just about any veggies to this dish, cabbage, bell peppers, onion, and anything else, and wait for your meal to be ready.

Just a shame I didn’t have any celery or garlic to add to it as I think it would have been even better!

 

Ingredients

1 medium savoy cabbage, shredded

1 red bell pepper

1 yellow bell pepper

1 onion, diced

450g smoked pork, diced, but not too small

300g potatoes, diced, but not too small

300ml cold water

salt

pepper

1 Oxo cube, or similar

 

Method

 

Pour the water into the slow cooker, crumble the Oxo cube over the water.

Add the peppers, onion, pork and potatoes, season to taste with the salt and pepper.

Put the lid on the slow cooker and cook on HIGH for 4 hours.

After that, add the cabbage and continue cooking for 1 more hour.

 

 

 

 

Ham, Mushroom & Potato Slow Cooker Casserole December 19, 2015

I know, it doesn’t look that appetising but believe me this is comfort food at it’s best.

 

Ingredients

5 large potatoes

2 tins Condensed mushroom soup

2 cups grated cheese

2 cups cooked cubed ham or chicken if you prefer

 

Method

Firstly peel and thinly slice the potatoes. Put a layer of potato slices in the bottom of the slow cooker, followed by a layer of soup. Then sprinkle a handful of the cubed meat over the soup followed by a handful of the grated cheese. Carry on like this until all ingredient are used.

Set the slow cooker to HIGH and leave for 6 hours.

Enjoy.

 

 

Slow Cooker Chocolate Lava Cake November 8, 2015

Choc Lava

This is a nice easy dessert, as long as your not using your slow cooker for dinner.

Serves 12.

 

Ingredients

 

1 box of Devils food cake mix

1 & 2/3 cups of water

3 lrg eggs

1/3 cup of oil (I used olive oil)

2 sachets chocolate angel delight (instant chocolate pudding mix, approx 4oz)

2 cups cold milk

12 oz milk chocolate chips

 

Method

 

In a large bowl, combine the cake mix, water, eggs and oil. Beat on low speed for 30 seconds, then beat on medium for 2 minutes. Transfer to a greased 4-qt. slow cooker.

In another bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Spoon over cake batter then sprinkle on the chocolate chips. Cover and cook on high for 2 – 2 1/2 hours. Keep an eye on it after 2 hours, you’ll know when it’s cooked as the sides of the cake will start to come away from the side of the cooker. At this stage if you leave it longer it might start burning. Serve warm.

If it does go cold before it’s all eaten you can put a portion at a time in the microwave for 1 1/2 minutes…perfect.

Tip: I wouldn’t suggest you use this recipe for a smaller than 4-qt. slow cooker as it will likely boil over.
