A good way of sneaking fruit into the non-fruit eating kiddies 😉 This is a cakey type cookie as opposed to a crunchy one.
1/2 cup melted butter
2 Tbsp applesauce
1 cup sugar
1/2 tsp vanilla extract
2 cups plain flour
1/4 tsp baking powder
Line a couple of baking tins with baking parchment.
Preheat the oven to 200C/gas 6.
In a large bowl mix the butter, applesauce, sugar, eggs and vanilla extract.
Add the flour and baking powder and continue mixing until you see no more flour.
Spoon the mixture, well spaced as they will spread during baking onto the tins.
Bake for 10 – 15 minutes depending on how dark you like your cookies.
