Choc/Mallow Eggy Bread anyone? September 4, 2017

Hi & hello to all new follower’s of my blog, it’s lovely to have you along 🙂

Ok so I came home after walking for 2 hours in the rain with Bertie my dog, we were both soaked through & I needed something special, this was it!

Ingredients

2 slices bread

Nutella or your favourite chocolate spread

A handful of mini marshmallows

2 eggs, beaten

Butter

Method

Pour the beaten eggs into a shallow dish

Spread one slice of bread with chocolate spread then put the marshmallows ontop of the chocolate spread. Place the second slice of bread ontop of the marshmallows & press down gently.

Put the sandwich into the beaten egg for a minute then carefully turn it over to get that sandwich covered in egg.

While the sandwich is soaking up the egg, heat the butter in a frying pan, once it’s hot add the sandwich, let cook for 2-3 minutes until a lovely brown then turn over & again give it 2-3 minutes to go brown.

Eat & enjoy!

Quick and Easy Microwave Chocolate Fudge October 18, 2015

Quick Fudge

You can literally make great tasting fudge with just two ingredients and a few minutes of prep time. This is a great base recipe to start from. You can add in nuts, dried fruit, chilli powder for a spicy fudge, anything you can think up.

 

Ingredients

 

1 tin condensed milk

3 cups milk chocolate chips

 

Method

 

Pour condensed milk and chocolate chips into large glass mixing bowl.

Put bowl in microwave for 1 minute on high.

Mix condensed milk and chocolate chips until it becomes closer to a fudgy substance.

Line an 8” x 8” pan with baking parchment.

Pour in the batter and spread it out evenly.

Put it in fridge to cool for 2-3 hours.

Take it out of fridge, pull out baking parchment with fudge, turn over and peel away baking parchment.

 

 

Chocolate Easter Cake April 2, 2015

Easter 1If you have children in the house they’ll love helping you decorate this. Freya, my 3 year old Granddaughter helped me decorate this one 🙂

Ingredients: for the cake

125g soft margarine

125g caster sugar

2 eggs

1 Tbsp golden syrup

125g self raising flour, sifted

2 Tbsp cocoa powder, sifted

2 Tbsp milk

Ingredients: for decorating

175g milk chocolate

225g butter, at room temperature

1 Tbsp milk, at room temperature

1 tsp vanilla extract

250g icing sugar, sifted

17-20 Malteser Bunnies, depending on size of cake

1 packet of mini chocolate eggs

3-4 easter chicks

Method

Preheat the oven to 160C/325F/gas mark 4. Lightly grease/line 2 18cm/7ins shallow cake tins.

Place all of the ingredients for the cake in a large bowl and beat to form a smooth mixture.

Divide the mixture between the two tins and level the tops.

Bake for 20 minutes or until springy to touch.

Cool in the tins for a few minutes before turning out onto a wire rack to cool completely.

For the buttercream, melt the chocolate in a heatproof glass bowl over hot water, stir occasionally until it’s completely melted & is smooth. Leave to one side to cool.

In a large bowl beat the butter, milk, vanilla and icing sugar until smooth. Add the melted chocolate and beat again until thick and creamy. If it looks too runny simply keep on beating as this will thicken the icing and improve its consistency.

Sandwich the two cake together using some of the buttercream, then spread the rest around the sides and top of the cake.

Gently press the bunnies onto the buttercream around the side of the cake then, with or without a childs help, decorate the top 😉
